Apple Aioli
Makes about 250ml
Ingredients
1 Granny Smith apple
Juice of 1 lemon
4 Egg yolks
2 cloves Garlic, crushed
2 cups Extra Virgin Olive Oil
Sea salt flakes and freshly ground black pepper
Method
Grate the apple and immediately soak in the lemon juice. Process the yolks in a food processor with the garlic, grated apple and lemon juice. While processing, add half the oil in a thin stream and then the rest more rapidly, until emulsified. Season to taste
