Oysters with Eschallots and Verjuice

Ingredients

6 freshly shucked Oysters
2 Eschallots, finely diced
1/3 cup Verjuice
1 tbsp Chervil

Method

Add the chopped eschallot to a bowl with the Verjuice and the chervil and let sit to amalgamate the flavours together. Spoon onto the freshly chucked oysters, and eat.

Oyster tips: To keep unopened oysters fresh, when you get them home, wrap them in wet hessian, or a tea towel, don’t keep them too cold and you can keep them fresh for a number of days.

An hour before you want the oysters, add them to a bowl of cold water. This cleans away some of the shell grit.
