Spiced Pear Marinated Pork Spare Ribs

Step 1: Melt the Spiced Pear Paste in the Verjuice either in the microwave or in a saucepan over low heat.

Step 2: Allow the emulsified paste to cool slightly and then add the chopped thyme to complete the marinade.

Step 3: Place pork ribs in the marinade, working the mixture all over the meat before leaving in the fridge for at least 2 hours or overnight.

Step 4: Remove the meat from the fridge and allow it to come up to room temperature.

Step 5: Heat barbecue to medium-high temperature. Brush grill with an oiled brush before placing ribs on heat, and cook until the first side is caramelised. Brush occasionally with extra marinade and cook for 2-3 minutes, depending on thickness of meat. Turn ribs and cook as per the first side.

Step 6: Serve with a fresh salad of bitter greens.

  2. 2 tbspn thyme chopped
  3. 750g 5 to 6 pork ribs individually cut
  4. To taste salt flakes
