Milk-fed veal can be fed either its mother’s milk or formula, but the formula-fed calf takes longer to reach the desired weight than a calf fed by its mother.
There are several suppliers of milk-fed veal across Australia, but it is a very specialised product and not that easy to obtain since most butchers sell yearling beef in place of true veal.
There is a huge difference between the two, as milk-fed veal is moist, sweet and delicate; to me, yearling occupies a tasteless middle ground between this and the aged beef I like from a mature animal. ‘Bobby veal’ from unwanted dairy calves, makes a better and easily affordable alternative to yearling. ~ Maggie
