This slow-cooked piquant relish is the perfect accompaniment to any one of my pates. With the woody flavour of rosemary and just the right amount of bite from Vino Cotto, there is a wonderful balance of flavours well beyond the earthiness of onions. Warm to serve, with grilled sausages, use as a base for pizza or fold into the perfect frittata.
