More about Duck & Green Peppercorn Pate
From Duck and Green Peppercorn, Duck and Vino Cotto and Duck and Orange have become an important part in our range, all made in our Tanunda kitchens. Whilst each of these pates is made from duck and chicken livers with their various special flavour differences, it's the richness of the duck liver that sits at 51% of the volume of livers in the pate, that is the defining flavour that over rides the chicken liver.
Whilst there are times when you might eat at a restaurant, a duck liver mousse or pate that may be made with all duck liver, this is so rich when made with butter that it is becomes a flavour than has limited acceptance and I love these pates so much I want them to be enjoyed by a wide market of food lovers.
