Apple Aioli

Step 1: Peel and grate the apple and immediately soak in Verjuice.

Step 2: Process the yolks in a food processor with the garlic, grated apple and Verjuice. While processing, firstly add the Extra Virgin Olive Oil in drops for the beginning third and then in a thin stream and the last third more rapidly, until emulsified. Then add the grape seed oil in the same way until completely emulsified.

Step 3: Check for seasoning and possibly add an extra squeeze of lemon juice.


  1. 40ml 2 tbspn Verjuice
  2. 1 clove garlic peeled and crushed
  3. 175ml 3/4 cup grapeseed oil
  4. To taste salt flakes
