Bitter Salad Greens with Spiced Pear Paste Dressing

Step 1: Wash and spin salad greens to dry.

Step 2: For dressing, place the Verjuice and Spiced Pear Paste into a small saucepan and place over a low heat. Once all the Spiced Pear Paste has melted, allow to cool and add the Extra Virgin Olive Oil. Season to taste before using.

Step 3: Place all greens into a bowl and dress with only enough dressing to coat the leaves.

Step 4: Finish with shaved parmigiano reggiano and walnuts.

  1. 250g 1 bunch rocket
  2. 40ml 2 tbspn Verjuice
  3. To taste sea salt
  4. 20g parmesan
  5. 50g walnut roasted and skinned
