Broccoli with Lemon and Almonds
Step 1: Place a medium size pot of water over a high heat, bring to the boil and add a pinch of sea salt.
Step 2: Place the broccoli into the pot of salted boiling water and cook for 2 minutes, or until cooked through but still bright green, then remove the pot from the heat and strain off the water. Cover and keep broccoli warm.
Step 3: Working quickly in another pan, heat the butter over a high heat until it turns nut brown, then add the Extra Virgin Olive Oil to inhibit burning.
Step 4: Add roasted almond flakes to the butter and toss. Place blanched broccoli into the pan and season. Deglaze with juice of the lemon, and remove from the heat.
Step 5: Place on serving plate.
