Creamy Bircher Muesli with Apricots and Currants

  1. Step 1

    Place the oats into a large mixing bowl, then add the yoghurt, milk, Verjuice, cinnamon and honey and mix together until well combined.

    Cover and place in the fridge overnight.

    Place the currants into a small bowl and pour over the Verjuice. Cover and leave overnight to soak.

  2. Step 2

    The next morning, give the muesli a good stir and divide into 4 serving bowls.

  3. Step 3

    Cut the apricots in half, remove and discard the stone. Tear the apricots into pieces and place over the top of the bircher along with the soaked currants.

  4. Step 4

    Drizzle over honey and serve.


  1. 2 cups rolled oats
  2. 1/2 cup full cream milk
  3. 125ml 1/2 cup Verjuice
  4. Pinch of ground cinnamon
  5. 2 tbspn honey
  6. 4ml 2 tbspn Verjuice
  7. To serve, extra honey
