Dried Pear and Macadamia Stuffing

Step 1: Slowly cook onions in extra virgin olive oil over low heat until soft and golden.

Step 2: In a separate pan cook bacon until sizzling.

Step 3: In a large bowl, add bread crumbs, lemon zest, chopped pears, macadamias, bacon, onion, handfuls of herbs, salt, and pepper.

Step 4: Mix well and set aside to cool.

Step 5: Once cool, squeeze handfuls together and stuff a chook, turkey, or goose.

Tip: With any extra mixture, roll into balls and roast alongside meat.

  1. 2 cups sourdough bread crusts off and coarsley chopped
  2. 2 medium onions diced
  3. 1 bunch lemon thyme
  4. 1 bunch chervil
  5. 1 bunch parsley
  6. 1/2 cup macadamia chopped
  7. 1 lemon zested
  8. To Season salt and pepper
