Pearl Barley Salad with Onion & Walnuts

Step 1: Soak finely sliced red onion in Verjuice for ten minutes or until onions are soft.

Step 2: Boil the barley in ten cups of water without salt until cooked.

Step 3: Strain the barley and add half to the onion mix while barley is till warm. Also add parsley and dill to the mix.

Step 4: Place the remaining barley into the fry pan over a low heat, add sunflower seeds and walnuts and heat for five minutes.

Step 5: Combine the two mixes and season with salt and pepper to taste.

Step 6: Top with fresh leaves and serve with Nasturtium leaves.


  1. 1/2 red onion finely sliced
  2. 1 cup pearl barley
  3. 1/3 cup parsley
  4. 1/3 cup dill
  5. 1/2 cup sunflower seed
  6. 1/3 cup walnut
  7. to taste sea salt
