Oysters with Eschallotes and Verjuice

Oysters with eschallots and verjuice

Step 1: Add the chopped eschallotes to a bowl with the Verjuice and let sit for 10 minutes to amalgamate the flavours.

Step 2: Spoon onto the freshly chucked oysters, add chervil and serve.

Maggie's Tip: To keep unopened oysters fresh, when you get them home, wrap them in wet hessian, or a tea towel. Don’t keep them too cold and you can keep them fresh for a number of days. An hour before you want the oysters, add them to a bowl of cold water. This cleans away some of the shell grit.

  1. 20g 1 tbspn chervil plucked
  2. 40ml 2 tbspn Verjuice
  3. 50g 2 eschallotes finely diced
