Chocolate Salted Caramel Dessert Pots with Peanut Brittle

Step 1: Evenly spread the peanuts out on to a baking tray lined with baking paper, set aside.

Step 2: Place the sugar and ½ cup of water into a medium sauce pan and place over a high heat, stir until the sugar has dissolved, then stop stirring and cook for 10 to 15 minutes until golden brown.

Step 3: Then remove from the heat and stir through the butter, once well combined pour over the peanuts and ensure all are coated, set aside for ½ hr (30 min) to cool to room temperature and set hard.

Step 4: To serve, remove the chocolate pots from the freezer and allow to sit for 10 minutes to soften, break the brittle into pieces and then spoon the chocolate pots into 6 serving dishes and top with peanut brittle.
