Sparkling Ruby Cabernet Granita

Granita spons

Step 1: Place the Sparkling Ruby Cabernet, sugar & orange zest into a medium size pot. Place over a high heat, bring to the boil and then reduce the heat to a rapid simmer and allow to cook for 5 minutes.

Step 2: Remove from the heat and set aside to allow to cool slightly.

Step 3: Pour into a freezer proof dish and then place into the freezer for 8 hours or until frozen.

Step 4: To serve, using a fork, scrape the frozen mixture (which will start to look like snow) and divide into serving dishes and serve straight away. This can be kept in the freezer for up to 1 month.


  1. 1/2 tspn orange zest
  2. 1/3 cup caster sugar
