Spiced Apple Cake
Step 1: Preheat fan forced oven to 180C
Step 2: Grease an eighteen centimetre round cake tin.
Step 3: Place the flour, softened butter, brown sugar, cloves and grated nutmeg into the bowl of a food mixer.
Step 4: Beat together the mixture, adding the eggs one at a time until everything is incorporated (about 2 to 3 minutes). Mix in the black treacle and four apples, cut into two centimetre dice.
Step 5: Spoon the cake mixture into the prepared tin. Slice the last two apples into segments and arrange on top of the mixture. Sprinkle over the demerara sugar.
Step 6: Place the cake tin on a baking tray and bake in the oven for 50 to 60 minutes, or until a skewer inserted into the cake comes out clean.
Step 7: Remove the cake from the oven and allow the cake to cool in the tin on a wire rack.
Step 8: Once cool, slice and serve with crème fraiche (optional).
200g 1 1/4 cup self raising flour
200g unsalted butter softened, plus extra for greasing
200g 1 cup soft brown sugar
1 tspn ground cloves
1 tspn nutmeg grated
4 free range eggs beaten
40ml 2 tbspn black treacle
900g 6 small apple peeled and cored
25g 2 tbspn demerara sugar
240ml 1 cup creme fraiche to serve (optional)
