Spiced Apple Cider

Step 1: Cut the orange in half and stud with cloves.

Step 2: Place in a deep saucepan with the apple juice, cinnamon, ginger, cardamom and nutmeg. Bring to the boil over medium-high heat. Set aside for 30 minutes to infuse.

Step 3: Strain into a jug, discard spices and chill.

Step 4: Add the cider to the chilled base, stir and pour into glass over thinly slice apple, torn mint leaves and ice.


  1. 1 orange
  2. 4 whole clove
  3. 500ml 2 cups apple juice
  4. 3cm piece fresh ginger peeled and thinly sliced
  5. 6 cardamon pods crushed
  6. 750ml 3 cups apple cider
  7. 1 red apple cored and thinly sliced
  8. to serve ice
