Ingredients: 80g unsalted butter; 1 brown onion, finely chopped; 1 1/4 cup (250g) arborio rice; 140ml Maggie Beer Verjuice; Sea salt, to season; 3 cups (750ml) Maggie Beer Free Range Chicken Stock, warmed; 60g parmesan, finely grated; 2 tbspn Maggie Beer Extra Virgin Olive Oil; 150g oyster mushrooms, torn into strips; 200g enoki mushrooms; 100g portobello mushrooms, thinly sliced; Flat leaf parsley, roughly chopped, to serve; Maggie Beer Extra Virgin Olive Oil, to serve
