Ingredients: 300g lima bean, soaked overnight; 1.0L water; 2 cloves garlic, crushed; 3 bay leaves; 6 whole black peppercorn; 2/3 cup (160ml) Maggie Beer Extra Virgin Olive Oil plus extra to serve; 450g leeks, thickly sliced; 1 tbspn Maggie Beer Verjuice; 25g lemon zest (cut into strips, no pith); 2 tbspn butter; 400g buttom or swiss brown mushroom, thickly sliced; 2 tspn salt flakes; 1/2 tspn pepper; 1 handful flat leaf parsley, roughly chopped; 160g vache curd
