With a liberal dose of port and an extravagant amount of plump sultanas, currants, raisins and prunes, combined with freshly ground spices, this pudding is so rich with fruit. This is perfect teamed with rich vanilla bean ice cream or Maggie's Brandy Butter Sauce.
This year we have wrapped the pudding in a calico bag which can be used to store any leftover Christmas Ham.
Fill a large bowl with cold water and 1/4 cup (60ml) of white vinegar. Rinse the Calico bag in the vinegar water, making sure its totally wet. Wring it out well taking care that it is still moist then wrap the ham inside. Repeat every couple of days and your ham will easily keep in the fridge for up to 10 days.
Pudding Heating Instructions:
MICROWAVE: PIERCE A HOLE IN PLASTIC WRAP AND PLACE INTO MICROWAVE FOR 6 MINUTES ON DEFROST SETTING.
STEAMER: REMOVE PUDDING FROM THE BOX AND PLACE STEAMER ONTO 100% MOISTURE. LEAVE IN PLASTIC WRAP AND PLACE ON A TRAY IN STEAMER. STEAM FOR 25 MINUTES. REMOVE PUDDING FROM STEAMER AND SET ASIDE FOR 5 MINUTES BEFORE SERVING.
